At Perdido Coffee, we offer a selection of coffees that are blended for the ultimate coffee experience. We also have our Single-Original beans that are traceable to a specific micro-climate with lends each of our offerings to have a distinctive flavour, based on the best growing conditions and processing suited for each of our different coffee beans. Our Single-Origin beans are often blended to create a distinct flavour and experience for everyone to enjoy.
Perdido Coffee beans are grown at Finca El Perdido and Finca El Cristal. Within both fincas there exists a number of microclimates that produce a number of micro lots of coffee. Each bean is hand picked at the peak of its ripeness and processed in one of three types of coffee processing. The owner and farmer of Perdido Coffee works closely with his staff to ensure that there is attention to detail. This quality shines through during the harvest of our specialty beans.
At Perdido Coffee, our farming practices are respectful of the environment. No trees are cut down at either of our farms. Coffee plants are grown in the shade of trees and in a natural habitat which is why our beans are the most robust and flavourful Arabica coffee beans in Nicaragua.

Washed Coffee
Washed coffee uses machines called depulpers to remove the skin and pulp from the seeds. But not just any cherry is selected. Perdido Coffee cherries must have the perfect amount of ripeness to make sure they are sweet enough and are sorted for the perfect density. The cherries go into tanks full of water where the water washes away the rest of the mucilage and the fruit that has caked onto the seed. Finally, the seeds go onto beds in the sun to dry out.
Coffee farmers are an integral part of crafting its taste to enhance the country of origin and micro-climate environmental growing conditions. This means that the washed process highlights the true character of a Perdido Coffee bean.
Honey/Pulped Natural Coffee
As the name suggests, Honey processing results in the Perdido Coffee beans tasting as if someone had literally poured honey or brown sugar onto the beans. This method of coffee processing is considered halfway between washed and natural, resulting in a fruity but not too intense taste with complex flavours.
The Honey processing uses a depulper to remove the skin from the handpicked cherry before it dries out. The mucilage, which is what gives it the name “honey”, stays on the seed as it is dried in the sun afterwards to produce a sweet and flavourful but mellow coffee bean.
Natural/Dry Processed Coffee
During the natural process, the fruit remains on the bean and dries undisturbed in perfect climatic conditions. Both Finca El Perdido and Finca Crystal possess the ultimate environment for this type of processing. Natural/Dry Processed coffee beans offer the consumer an amazing and sweet flavourful coffee experience. It involves drying out the entire, freshly picked cherry with the seed inside and the pulp still attached. The entire coffee cherry is placed on drying beds in the sun where they are regularly raked to rotate them to enhance and coax out the ultimate flavour. At Perdido Coffee, the Natural/Dry Processing ensures the sugars and mucilage or flesh of the cherry coats and latches onto the seeds which enhance the flavours and make them taste sweeter. Once the coffee is dry, a machine then separates the pulp and skin from the seed.
The Natural/Dry process results in heavily bodied coffee beans with a deep and complex taste due to the additional time and attention spent during the processing. Due in part to the ultimate cherry experience, the Natural/Dry processing used at Perdido Coffee ensures the seeds ferment cleanly as they dry with the full cherry intact. Raking the cherries by hand ensures an ultimately sweet tasting coffee bean which is well worth the effort.
